There's no global setting to turn off the ribbon, but you should be able to go into the modulation matrix of each patch and set any ribbon modulations to OFF.

There are some known ribbon issues, however, where the ribbon seems to return to a zero setting when released in some patches, while latches at the last pressed value in others.  Are you absolutely sure that your problem isn't related to these issues?
