Yes. You can change it. Your changes would be associated with the 
patch, so make sure you save the patch, if you want to keep the 
changes.

You will find these settings in the control matrix. If you press the 
button upwards you will be browsing the 16 control sets that can be 
defined for each patch. If you press the button downwards ( the 
opposite direction) you will find the "pitch up" and "pitch down" 
settings for the pitch bend wheel. Notice these are independant, so 
you can bend a whole tone up and a whole octave down, for example.
