I'll answer my own question, if I may!  [:)]

Since posting my query, I was looking around the files section of this
list, and under Tips and Tricks I found Using an          Assign Knob
for Data Entry by Jon Levinson, which was exactly what I was looking
for! I now have Assignable Knob 8 setup to do this.
