would i be able to use the Doepfer R2M ribbon controller with the 200e? I guess not because of the voltage?

The R2M is the MIDI version, right? MIDI should work fine.

Yeah MIDI should work fine. The R2M will do both.   Both should work, but there's no 1.2V/oct CV on it - but I don't think you'll be playing melodies anyway

How can an analogue output on a ribbon be 1.2 volt?
I think it isn't quantized.
