For me, it's incredibly useful as a performance tool. With presets, you can instantly reroute audio and CVs to different destinations, and as JB points out, it's more than a simple router - you can also use it to mix and attenuate audio and CVs instantly by recalling a preset. I have mine set up so that the first four audio outputs go to the audio inputs on the 227e, and the fifth audio output goes to an effects bus consisting of a Roland RE-20 Space Echo pedal, routed back to the 297 Infinite Phase Shifter, then back into the 227. That way, any audio source to go directly to the 227, or to the effects bus, in any proportion, and in performance, I can switch those routings instantly. With the CV section, I route a bunch of random voltage outputs from the 266e to various oscillator and filter inputs, along with the outputs from the 250e, and because I can mix those random CVs in different proportions, I can derive additional random voltages from a more limited set of sources, again all under preset control. I can see how the 210 would be less useful in the studio, especially if you're working with basically one patch at a time, but for performance, I think it's essential - I use it all the time.
