I have a Radial JPC computer DI that works great it is optimized for such devices as yours but it is expensive. They have a great line of products especially for pro work. You can find cheaper similar gear, not as good unless you build your own (very simple to do).
I have found that if there is a USB port on the device that extracting audio from that is pretty good. I have doubled up on on the output from the devices where it is possible because anything that isn't 1/4", TRS or XLR is a repair waiting to happen and most of the these cheap bastards don't put headers on connectors stuck on SMD pcbs.
I have a 16 usb / 8 firewire port attached to my Apogee Ensemble you can use anything like it, I have a submixer with an input buffer feeding one of the Ensemble analog input channels. I plug the usb out into the hub and the 1/8' into the submixer. (An EPFM Craig Anderton board with a one chip buffer, soon to be replaced by an Yves Usson Yusynth stereo mixer module). You can use one or both outputs from the device.

IPods and iPhones usually sound like shit when wired to a mixer or amp with the 3.5-mm stereo headphone jack. I assume that the iPad would have the same type of weak output. Is there a recommended pre-preamp or direct-box to fix this?
Damon Albarn (Blur, Gorillaz) has just released an album done almost entirely with the iPad. http://thefall.gorillaz.com/
iPad Applications Used: Speak It! / SoundyThingie / Mugician / Solo Synth / Synth / Funk Box / Gliss / AmpliTube / Xenon / iElectribe / BS-16i / Mellotronics M3000 HD / Cleartune / iOrgel HD / Olsynth / StudioMiniXI / BassLine / Harmonizer / Dub Siren Pro / Moog Filatron
...and the landscape version of this stand would be good:
