I use Cubase on Mac.

I have far more stuff than I currently use. Trying to limit this is
deliberate, to force a deeper understanding of the units I do use. In
use:

AN1
DX200
Roland U-20
Kurzweil Micro Piano
Casio VZ-8m

I do have and use some VSTi stuff:

Model-E
VB-1
LM-4

P.S. Other than the AN1, what do people prefer to work with?
