Duh. This is done in the Parameter box on the left hand side of the
Arrange page for each active Track.

Yes, I believe it is but, like I said - I don't recall how without
opening the manual. Also, what if you have a Voice stored on your AN200
and you 'automatically' overwrite it when your Logic env loads? This is
the type of thing you need to keep in mind when using automation. Maybe
it wouldn't be a problem for you...I can't say.
