I've played 5' a 69 Strat, once owned by the late father of a local
music shopkeeper. OK, it sounds very nice, it was a dream to play (even
if i'm not a guitar hero), but objectively some contemporary instruments
sound and play as well and they don't cost an arm. End of the dream...
These high price tags are reached only because these instruments are now
collectors items and no longer tools to have fun with music.

Me too, Jimmy, but the problem with semiconductors is obsolescence, that
goes faster and faster. You'll have to design such an instrument
hardware very well to reach a good long term reliability, sometimes it's
easy, others not and expensive. But it's worth a try...
