I've just got a new regulated 12v 1200mah PSU that was on sale at the local Maplins which I think should be ok.

The original power supply is rated at ∗12 V DC - 700 mA∗ . It is
unregulated (mains transformer followed by a rectifier bridge and a
capacitor).
It's not far from yours .... i think the lack of maximum current could
be a problem, the 0.5 V no because there are internal voltage regulators
to provide the "right" voltages (i.e. 5 V DC for the logic circuits, 3.3
V for the static RAM battery ...) which are always lower than the input.
When you need higher voltages or split polarity supplies you will find
more or less integrated DC/DC converters with a step - up chopper
somewhere , or an oscillator driving a transformer . For example to give
the classic +/- 15 V for op-amps or D/A converters .
