Yamaha did, the AN1r. When the result was ready for production, the
project was canned.

I'm not familiar with the innards of the AN1x, but a friend of mine has
one with only half the polyphony, which suggests that there are two DSP
(digital signal processor) chips on board that take care of the sound.

you'll see some internal pictures of the AN1x. The circuit boards aren't
very big, so from that point of view, it should work. The one thing you
might have to worry about is software: what will happen if you remove
the keyboard?

The reason why I'm mentioning this is because my EX5R (rack), before I
sold it and got an EX5 (keyboard), had a different ROM. The difference
between the machines is, apart from the keyboard, 24 voice selection
buttons and their LEDs, the extra MIDI in/out on the EX5, so maybe it's
just that, and there would be nothing to worry about with a racked AN1x.

You'd need a 2U rack, probably, to have room for the display (they're
larger than the visible area) and all knobs and buttons. 19" might even
be tight to fit everything.
