[sdiy] Adding MIDI to cheap non-MIDI keyboard?

I would just tap to speaker cables and use a polyphonic audio to MIDI
converter on iPad (https://www.jamorigin.com/products/).
That Piano Mat is just a toy, wouldn't trust it for any performances
(though you could buy a spare one if something goes wrong).
