Tell your little voice "why should I develop a circuitry that translates 
the parallel 8031 bus accesses into serial ones, where the logic chip 
required would cost way more than a new (E)EPROM and may even slow down 
the already not quite fast 8031 even more."

Apart from that, there are also parallel EEPROMs and FlashROMs around,
like the 28xxx and 29xxx families. So no need for a UV eraser (which you
can get for next to nothing if you check out eBay for truly old face
tanners. The one with the skin-cancer-guaranteed sticker on them.)
