I'd like to add something about rubbed oil finishes:    My father taught me 
to use 600, 1000 and 2000 grit sand paper *with the oil* to wet sand the 
wood on the final application.    You can get it extremely smooth...   I 
have some walnut spice boxes that he made that are smooth as silk.
