As a potential buyer of these, first off thanks for making this happen.
PDFs are my preferred electronic format. Dead tree is then my option and
no concern of yours. Password protection is OK, but I'd rather it was
unprotected just for the sake of portability. Watermarking or tagging
the file with my name is perfectly fine.
For generating PDF files, have you considered PS2PDF?

It's free (part of the Ghostscript distribution for Windows) and I have
found it quite useful.
