[sdiy] recording MIDI data

Hi all,

This is probably a dumb or newbie question
but anyway...
Let's say I have a continuous stream of MIDI
data (like MIDI ctrls and possibly sysex, one
single source or possibly several simultaneous
MIDI ctrls + sporadic sysex), and I'd like to
record these data for later re-use (in a sequencer,
or any other piece of software).

Question : how could I do that ?
The 1st option that comes to mind is to run a
software sequencer and record the whole stuff
as a MIDI file.
But what if the MIDI data stream lasts for hours ?

Please don't ask me what I have in mind... :)
I'm just curious to know how you would handle
that problem... There's probably a simple and obvious
solution, but right now I must confess that it's late and
that I have a blank...
