A software sequencer would work. The files involved mark
each MIDI event with a time relative to the start. MIDI
files are actually quite small for a given amount of data.
The size of the files would be directly proportional to the
number of messages recorded, not the length of time. A file
representing say, 10,000 events would be the same size
whether it represents 1 minute or 1 year of play time. The
only issue then would be the stability of the computer
running the sequencer.
