may I only add my vote for Microchip docs.
IMHO all you need to start programming PIC is datasheet
of the PIC, and example programs that come with MPLAB,
and many more you can find on the net.
There's an example program sequence in datasheet for each
blok, like I/O ports, ADC, timers, EEprom, etc. so you
then know how to use it.
What else you need is just a little programming knowledge
and experience in general. A tiny bit at least.

There's one book I could recommend, but I doubt you'd want
to learn Polish just for that reason ;)
