Some of the differences that I've seen would be the wafer material (phenolic 
vs. ceramic ferinstance),  the size of the wafer,  which is going to affect 
possible operating voltage ranges,  and perhaps the techniques and quality of 
manufacture -- I've seen cheap little stuff where the metal frame secured the 
wafer with "twist tabs" and other,  better-made stuff where screws were used.

Just a few things that come to mind.
