Sure.  You can see an example of this proudly displayed on the front
cover of the ARP 2500 Owners Manual:

It's also interesting to display recorded music in stereo, left
channel on X and right channel on Y.

My personal favorite XY scope display is tapping the signals off of
two pickups from an electric guitar or bass.
