When I look at the schematics of the early Ensoniq synths I don't see any
S&H stage for the audio line; the analog out of the sound chip is
time-multiplexed and serially spitting out up to 32 oscillators which are
routed through a 4051 getting strobe and the channel address to meet their
destination CEM3379. At their signal inputs you'll find a small lowpass
(680R, 0.1uF) as opposed to the 68k series resistor mentioned in the
3379's data sheet.
The only place where they use S&Hs are CVs for the CEM3379s.
Maybe that's also the way to go for your polysynth?
