Mmm...interesting.  Odd that, for a battery-powered device, he uses a
linear regulator, throwing away half the battery power in the process!!
Would have been better to use a little DC-DC converter.  Anyway, I
digress.

Why not go for a little MIDI module from, say, Yamaha?  Lots to choose
from, like the MU5, QY20, etc.  And they are designed for battery power,
so will probably last longer on batteries than a homebuilt device.

Not wanting to put you off, but wavetable synthesis is not a simple
solution for DIY!!  Especially not for a polyphonic synthesizer, which I
would imagine you would need for a melodeon.
