Not if you want to use it like a sort of pitch controller wheel on a 
normal synth. Bend the sound/filter/osc/etc. away from it's 'normal' 
setting and have it return to the normal sound when you let go of the 
controller.

Although I've never used one, but I assume that both centering and 
non-centering would be useful for different things.
