Depending on how your mixer is built, there's shouldn't be any difference,
other than the noted level difference.  If there is much of a difference,
the channels may not be too well matched, electronically (the accumulation
of lots of +/- 10% part tolerances, etc).

You'd have twice the noise, but you'd also have twice the level of signal,
so that kinda evens out, though you're using more headroom.

You also lose a channel that might be useful for other things :>
