I agree with Harry about putting the shaft into the vise, and not the control
body. That's the way I do it. With a good vise (a heavy one, mounted firmly to
a stable, and even heavier object) sawing the shaft takes only a few seconds,
with a good hacksaw.

This is a good time to place a cut-off wheel on a dremel tool or die grinder,
to trim the small bit of shaft from the end. Be sure to wear protective gear,
and be careful. It's fine for one or two pots, but if you have dozens or
hundreds to work on, I'd do as Harry suggests and look for different knobs, or
consider recessing the pots on a separate mounting bracket, behind the front
panel.
