The noise comes from the AC generator (the inverter) for the EL.
Just replace with a LED based back lighting,
no inverter, no noise, looooong live time :)
There are led based back lighting elements that may just fit your bill.

There are also "top" lighting leds available with a low vertical and
wide horizontal opening angle.
These can be used to add light to non back lighted displays, or broken back
lighted displays that don't allow replacement of the back light element.

Farnell sells both the led based back light elements and the wide/small
angle leds,
as will probably most other shops too.

The EL foil advertised below seems to have a quite long half live of
about 10000 hours, provided you operate at low (about 1/10?) intensity.
Still sucks bigtime compared to LEDs.
