Hitting a thing with another thing (like piezo drum triggers)

Ribbon controller (who's got the diy version ???)

Theremin Controller... wave your hands...

A knob  (like the "tannerin")

Floor mats (like the keyboard scene in the movie "Big")

Touching some circuits with the fingers (a favorite of our friends
at .nl )
