I make all my gadgets with the 8051 controller series.
They work fine and can generate the needed baudrate for midi internal
and I have
a lot of software from assembler, basic, c, pascal up to plm for them.
As I also have an emulator this microcontroller is my first choice.

But if you need audio calculations on the fly I would recommend Analog
devices
signal processors - I played with the fixed point ADSP2181 a few years
ago to
make a first stage for a monophonic synth but had to stop during lack of
time...
