   It might be worth contacting www.organservice.com and ask for a suggestion.

It may be worth buying a new or used midi controller keyboard (Fatar,
Yamaha...), throwing out the midi electronics and building your own
interface.  I have no idea which controller keyboards are more
appropriate for this.  Some of the nicer ones have a pretty good feel,
and they might even be set up so you can grab velocity or aftertouch
signals.
