well, you're not going to get the ∗exact∗ sound of a string machine, simply
because they're built completely differently

My ARP Quartet makes its string sound by running 4 square waves (I think
they're square waves...I don't know maybe there's a bit of waveshaping too)
at different octaves and volumes through a simple envelope and 3 separate
BBD-based chorus circuits in parallel. so you're not going to get that with
the Poly 800 but if you put it in double mode, put both on saw, play with
the octaves a bit, detune slightly (set it to 1 or so), use the standard
long attack and release style envelope, filter kind of mid-high, maybe 75,
no resonance, lots of chorus. It won't be exact but it's passable.
