Yeah, the EMLs used either 741s or 748s (mostly), with the 748s more prevalent in the 100 & 101, as will as some later designs.
There are some discrete transistor circuits, but if I recall, they were limited to mostly things like mic preamps, etc.
As far as the sound is concerned, the best description I can come up with is "tight". They are extremely controlled - probably due to the fact that those guys came from Gerber, where analog computing was king at the time.
