I'm sure some whiz can calculate it exactly, i'm no good with math so
i woud try to add an indicator and gradually add the baking soda.

If you have no indicator at hand i'm told cranberry juice will work.
Also i recently discovered radish juice (from the red outer skin) is a
nice indicator, you can guess when i discovered that...
