It tends to be more than EQ or added instruments. As a general trend, a "remix" in the manner we're discussing here is usually longer, more danceable -- often completely non-dance genre songs are turned into dance remixes -- and add a capella or broken-down parts (just bass and drums, etc.). Sometimes, samples from one part of a song are triggered into another part. There are no hard-and-fast rules; the end result is supposed to be intriguing and danceable -- everything else is up for discussion.

Go down to your local record store and rummage through the 12" LPs for some ideas. Also, look for CD singles with a "house remix" or something similar along with the original track.
