Thank you all for your input so far.
The idea is I could hack something together very quickly by connecting off the shelf devices, and not getting into the rabbit hole of knobs, DIY cases etc
I gave it some more thought, and I figured I can find used mini PCs for a fraction of the price of an rpi5 and with better options in terms of software and hardware upgrades (ie, extra ram, additional storage etc). Meaning I might as well have a windows box
with a vst host and a touch monitor or/and usb midi controller and call it a day.
The question still stands though - are there any softsynths that are optimised for a touch screen? Does it feel any good at all to control one with your finger or should I think of something else?

Not touch screen, but MiniDexed is kind of the darling of the
Pi/Synth world these days. Its a DX7 emulator that uses a jog
wheel and a 16x2 LCD. You can bang this together with a
little time and not much cost.

I was about to recommend a related project, also based on Cirle (a bare metal c++ 'environment' for raspberries), which showcases their touch UI.
