Naturally I forgot to send this reply to the entire list. Latest developments first...
I pulled the trigger on a DreamSourceLab DSLogic Plus on Amazon. The version with shielded wires and clips.
What clenched the decision was that the software for it simply runs in macOS Mojave without any futzing around. Pulseview is DOA, instacrash on every OS version I've tried. Quarantine, codesign—you tell me. I don't have time to fool with it any further.
It still hasn't shipped after five days and the date has been pushed back. This model is gone from the site but it ships from Amazon so here's hoping one turns up.

The learning curve isn't very steep and by playing with it for a while you'll have a better idea what you need and be able to make an informed choice of what to buy - or the "toy" might be good enough and you've saved a load of money.
Prices are going up. That's why I've gotten off the fence now. I've blown a lot of money in the last two months.

I get what you're saying but I know I'm eventually going to need ≥10MHz of actual throughput to work on my counters. That's the other reason why Im focussing on something faster. If I need more bandwidth I can go down that path later.

Funny how there's no marking system for these cables with USB-Cs on them. You're supposed to buy a cable tester with a 1.8" OLED on it. Looks gorgeous and I can't read it from a foot away. The better model allows you to use you phone.
Add to that the fact that they've been playing games with the USB protocols themselves for years. The nomenclature for USB 3.x has fundamentally changed at least twice and it's still incoherent. Plug color conventions for USB A and B helped but they've never really be enforced. USB C—what colors?
At least Thunderbolt cables have a lightning bolt on them.
