I was thinking exactly the same thing, Roman!
You get a 2.5V average output level so the required gain goes way down and that saves picking up mains hum, extraneous noises, etc etc. Plus you get reliably white output from *every* device, not just some of 'em. There was a reason we moved away from transistor noise sources back in the day...;)
