PLLs are analog.  I'm not sure what you mean by "digital control".

PLLs are often used for FM radio demodulation, so yeah.

That's an even goofier video!

Theremins can have a problem with very low notes because the two oscillators can sync up as their frequencies get really close.

So yeah a flip-flop on the output is reasonable feature.
