[sdiy] Best way to wire up a multi-channel cable?

I'd just use Ethernet cables for this purpose. They are shielded and I 
had quite good experience running balanced lines between multiple 
stories for at least 50 meters.

One cable can run 8 signals single ended and I would be very surprised 
if this was an issue over a short run below 20 meters based on my 
experience with much more sensitive signals.

Proper shielding and grounding reqired of course (see Rane application 
note: https://www.ranecommercial.com/legacy/note110.html).

Don't let the perfect be the enemy of the good.
