I used H11F3 in the past and they too are slow..
I tried to use them as a voltage controled volume
but they bring distortion in the audio path..

Could you maybe use an H11F3 or similar in your application?

Is there any device that could replace a slow responding LED/LDR combo ?
I was thinking of this LED/photo transistor/bridge replacement..
The only thing to be carefull about would be the diodes voltage drops,
But using very low current that voltage drop could be very low..
