You can try the mu-metal shield but I bet it will play havoc with the inductor value, so the end result might be unpredictable.
I think emulating the potentiometer will be harder than fixing the inductor hum issue. A real pot will allow almost any signal level with no distortion.
I'd fix the power supplies that make the noise rather than try to shield the inductor.
