I didn't say you need _a lot_ of pressure. You need _enough_ pressure to
A) keep things in place and B) close the joint. If your surfaces are
perfectly planar and your workbench is perfectly level theoretically
gravity alone could do that job for you, but reality has shown both are
often not the case.

At least in the glue tests (acrylic on acrylic, acrylic on aluminium) I
made in my life so far a little (or even a lot of) pressure was mostly
better than no pressure - or at least the joints where I applied
pressure were able to withstand bigger forces.

This is indeed true with Cyanoacrylate glue (arcylic turning cloudy).
But this is only true for the contact surface. So unless you plan to
glue the acrylic directly onto the screen (instead of gluing it on the
case/panel) this would very likely be just fine.

This is a good option, especially if you do not require a good seal or
incredible bonding strength. I have seen both two thin stripes (2-3 mm
wide) and rectangular tape cutouts. 3M VHB is one of the tapes often
used in smartphone/tablet/notebook screens, although one could probably
find cheaper alternatives.
