If you want to connect cabinets with multiple lines, then why not take 
advantage of over 150 years of experience in telecom industry and use 
pretty common, cheap 50-pair connector, I don't know how they are 
officially called, we used to call them "Amphenol" sometimes 
"Centronics". Like this one:

Another option is good old SCART connector known from analog TV. Cables 
should be still around and very cheap. And most of the wires are shielded!

Not to mention round multipin connectors of various sizes, widely used 
in industry, military and aerospace, but the cable plus connectors for 
just one link may cost several hundred $.

But in terms of price and availability, I think nothing beats RJ45
