This might be a little cursory to what you're looking for but the book Code by Charles Petzold is about how computers function at the logic circuit level.

There is a large section devoted to how to make - abstractly - a calculator, iirc, with memory using nothing but relays configured in different logic configurations. It's a really great book I think.
