For the record, I am using the "fancy" Apple Mail.app and everything is fine.
My email host is also an Apple Xserve running Mac OS X.
It's a little strange seeing the Synth-DIY rewrites, but I understand that's necessary. I just click on the buttons until the individuals and/or list address shows up as desired. In my experience, Google Mail is the worst offender for doing things against internet standards, but it's been a long time since I noticed.
