One obvious difference would be that the voice can have envelopes (etc)
that control reverb parameters of the voice's reverb.

A less far-fetched reason to have reverb per voice would be if there are
considerable nonlinearities in the reverb, making polyphonic reverb sound
very different than the same reverb applied on the sum of voices. Some
existing electromechanical instruments can have a similar behaviour. That
could end up really interesting, but almost feels more like part of a new
instrument rather than a reverb you put on a polyphonic instrument. And
perhaps the desired effect could be implemented in other ways than
multiplying the number of reverbs.
