C3 & C5 appear to be superfluous if these are in parallel with the bulk
caps C1 & C2?

Have a look at a linear regulator data sheet, you’ll see 10u electro on the
output. You can also add a 100n ceramic on the output to help with
stability. Keep them as close as possible to the output.
