Many many reasons :)
As an ex network engineer (CCNA/CCDA) the main problem is that network
protocols (TCP/IP being the most common) do not offer a guaranteed
delivery time. SO packets can arrive at slightly different times.
I worked with someone updating their network as their network provider
wanted to move them off ATM and onto MPLS, the network was used
specifically for simulations where timing was critical. Even with the
best settings on the MPLS network there was still an unacceptable amount
of Jitter.
that said, these days things are faster, and IF you could manage a
network switch specifically to handle the requirements of constant
timing and known traffic use/packet sizes, then it could work.
