I don't really know an in-depth answer to your questions, but there has
been a fair bit of discussion here on the list about digital stuff and
the latest cool MCU options (that mostly goes way over my
substantially-analog head!)
I will note that I've seen a few DIY projects that used the MCP4822
chip, which is a little cheap dual 12-bit D/A converter with SPI (but
getting a bit long in the tooth now though, so I'm sure there are better
options out there...)
