In fact any software which can send data to the audio interface can produce CVs this way.
I did so with Max/MSP (in a project where I used it in conjunction w/ Ableton Live) and have been doing so with SuperCollider.
I mostly do so for augmenting the modular with recorded more complex signals it produced itself.
I didn’t check if this has been mentioned before, in reply to the OPs original question:

When “reading" a synth’s output levels are usually higher than what an audio interface can cope with.
Also, assuming without any closer specification, recording very slow signals would be an issue.
A mixing desk with direct outs could be helpful, but for obvious reasons it’s not DC-coupled.
Also on most on those interfaces with DC-coupled outputs the inputs are AC-only.
etc.
For the first project above I got me the Expert Sleepers modules, which have been proving reliable and a great help.
