The cables that Tom initially asked about:

looks like ordinary IDC cable with individually crimped ends.

The ones that Scott linked to:
   http://www.mouser.com/Search/ProductDetail.aspx?R=25001-1002virtualkey53810000virtualkey538-25001-1002
are flat ribbon that has had the insulation at the ends pre-cut ready
for removing and installing.  Most likely solid single-core as well.

The ones that Paul linked to:
   https://www.rapidonline.com/rvfm-flexible-jumper-25pin-50mm-50-1671
are a custom made-to-length assembly that is similar to a flexible
PCB, and about 10x the price of the Molex pre-cut cables at Mouser.

If your boards are not moving much then I would get hold of some
cables from Mouser and try them out.

Oh, and "I don't need to be able to separate the two boards".  You
will, one day.
